Healthcare workers. The South Texas Medical Center is one of the largest concentrations of hospitals and clinics in the state. The violations there are the ones I see across healthcare: automatic lunch deductions while staff work through the break, charting after the shift ends, and unpaid travel time for home health aides. If your lunch is docked while you work, those hours are owed.
Hospitality and tipped workers. The River Walk and the city's tourism economy run on servers, bartenders, cooks, and hotel staff. Tip theft, illegal tip pools, tip credit violations, and off-the-clock prep and cleanup are everywhere in this work. Construction workers. Day rates, piece rates, and 1099 classification for crews working well past 40 hours a week.

Eagle Ford oilfield workers. South and west of the city, the Eagle Ford Shale runs the same day-rate and 1099 pay practices as the rest of the oil patch. The day rate rules apply the same way.
